ventrilo is a client-server application, not a peer2peer one (in which case each client sends the voice packets to the others) so the IP addresses of the clients are known only by the server and are not communicated to the other clients.
usually i would agree with Luigi and say its senseless and that don't talk crap, however msn and skype should be client to server to client too, but on some wierd cases msn and skype does let the IP thru (ip of the person you talking/chating to not upon file transfer). is it possible in ventrilo to private chat or talk to somebody or maybe send a file ? i suggest you test out with your friend who's IP you already know, monitor your packets and see if his/her IP pops up on some point, try doing as many things in vent as possible. i never used this gayvent, so i don't know what is possible to do in there besides some low quality group talk. if all this won't work, then you have been fooled just like most of ppl these days, the person just knew the ip from somewhere else or he/she was admin and hided it or that person simply knew some exploit to get admin privileges.

for any other doubt about ventrilo and its protocol (where are transmitted all the informations also about other clients) I suggest EVER to use my ventrilo_proxy which decrypts and logs anything:
